It depends on how good the car thief is. It's not going to stop them from loading it on a flatbed and hauling it off. It will keep most of them from hot-wiring the car and driving away, or using a copy of the key that does not have the right chip.
It makes the car that much harder to steal, but of course, nothing is impossible.

The chip inside the key must be read by the ECU or it will not start the car.
Therefore each key must be programed into the ECU before use. No gimmick.
