not from the engine bay from the Radiator cap and we ended up opening it and it blew the cap off. (and yes we did it carefully)

guarantee its a coolant leak...

its the coolant hitting the exhaust that is causing the white smoke

i had a slight leak on a hose and had the same issue, i replaced the hose. fixed.

nah, no water pump, if you see white smoke, you have a definete leak.

First of all check for leaks. Go to an auto-parts, get a pressure tester for the cooling system, put the system on pressure (watch out for hot coolant, always release pressure from system before opening the radiator cap) and check for leaks. If the engine only leaks while driving it is very possible that the water pump is blown. If the systems leaked most of the coolant it is logic that the engine will overheat.
If there is no leaks and still the engine is overheating there are a few things to check. It is possible that the fans are defective, the thermostat is locked close, the cooling ducts are clog. Good luck!

Go find that leak. Running hot can cause other problems to occur so do it fast.

My leak turned out to be behind the intake manifold (plenum).

The water pump is driven by the timing chain. It's a very simple device. If it were to fail, the engine would be making some very strange noises.

Congrats, I can't believe you went through all the trouble of buying and installing a new thermostat before even fixing the leak, but still at least the problem is fixed.
