Service Advisor says 5,000 not 3750
I called my service advisor to get my G in for it's first service at 3750 like a good boy. They said Infiniti recommends service at 5,000 and just to ignore my owner's manual. Any thoughts? Is this cool or not?

Not Cool!
Infiniti recommends the first change at 3750 miles, not 5000 miles, and they are very specific in their service maintenance schedule.
If I were going to "ignore" anything, it would be what your service adviser told you. Find someone who wants to do it.

Please understand that service writers are salesmen, most know very little about automobiles! Usually more than the vehicle owner but not much.

Infiniti recommends 3750 and 7500 depending on the conditions you drive in. Nothing is in the book about 5000
follow your owner's manual. that is how you stay warranteed.

The opinion is pretty much universal, though, that if you plan to keep your car for 100,000 miles or more, you're best off to change the oil at 3,000 - 3,500 mile intervals (especially the first oil change) if you want the engine to wear well and keep the power output up over it's life.

with oil changes more is better as long as you don't rev the car at first start until the oil pressure is good. i actually just hit the ignition quickly about a dozen times after an oil change to pump some oil up into the engine before actually starting it.

I waited until 7500 for my first oil change, and got synthetic at that time. Shock Horror! Two no-no's on the same day! 
I'll be changing it again at 15,000. The amount I drive my car, if I did every 3750 I'd be in the shop every two months. And I'd much rather be on the open road.

Same here. I do the 7500 mile interval with Mobil 1 5/30 since new. I did the first one at 2200 though. Then at 7500, then every 7500 from there. Now with 41000, smooth as silk and stronger than ever.

It depends on how hard you have run it. If you have really been babying it, then its probably not fully through the breakin yet at 1200. It would be plenty safe now to do a few full throttle blasts a day from 0 up to 80-90 MPH over the next week. Then take it in and have them change it with a good 5/30 synthetic (Mobil 1, Amsoil, or Redline). They probably will tell you to wait, but dont worry. If you have worked it good up to redline under load a dozen or so times, then the rings are seated and no oil consumption problems will occur down the road. And you will get rid of all those nasty metal fines early on. I only use the 7500 mile interval because I use synth and 90% of the miles are highway. If you do mostly short trips and stop-go, then 3750 is what you want to do.

I'm thinking about switching to the 7500 mile service. I am sure I won't own this car when it has 100K on it. Just force of habit had me in there at 3750 intervals.

i change my oil about once every 6 weeks to 2 months. that works out to about 4500. i use Mobil 1 10w30 and I change it when the oil turns brown instead of gold. that pretty much tells me my filter is full.
but if you are in the 3000-5000 mile range you are probably safe. 7500 I would be a bit concerned unless you truly don't put the car thru ANY of the hard driving criteria
