Is it worth swapping to black Interior?
If you get a black interior, make sure it is not sun baked. I bought a car from Florida, all original and low mileage. Car had no window tint and lived outside year round. Every interior plastic or piece of leather in that car was quite fragile or brittle.
Would prefer a black interior but finding one that isn't shot here in Texas due to the sun (and typical owner neglect) wouldn't be easy. Plus you'd really need to swap the dash to make it look right and that's a pretty big job. Seats, carpets, console, door panels, that's not particularly tough, just time consuming.
I definitely think it's the sort of project where you should buy a wrecked donor vehicle with the preferred interior color. There's a LOT of pieces to swap and buying them individually, especially the seats, you're going to end up spending nearly $1000 anyways so might as well pick up the whole chassis. Then you can part out the powertrain and recoup the cost of the whole ordeal minus your time spent. When you're done just load everything into the spent chassis and haul it to the wrecking yard, a p[ick-n-pull would probably pay YOU to drop the thing off.
