G35 dripping a lot of water
I have a 2006 G35 Sedan, I just recently moved to a beach town and lately its been 93 degrees outside with humidity of 70%. I noticed when I drove my car yesterday the belts were squeaking and when I popped the hood there was a lot of water dripping onto the splash shield underneath the engine bay. Is this just from a/c evap drain due to high humidity or something else (I just think its weird that water would have gotten all the way up onto the belts). Something else to note is I just had the car in the shop to replace the brakes, valve cover gasket, new belts, and power steering, I took it to a very reputable shop who knows these cars in and out so I doubt it would have to do with this. Any advice would be appreciated!

AC condensation typically comes out of a little drain at the bottom of the cowl, the water actually drips from INSIDE the car through a tube, onto the ground. NOT at the front of the engine, that's the hot side of the system.
Since this just started after having the vehicle serviced they may have forgotten to do something like put the radiator cap on all the way.

Okay I just went to drive it and the car started overheating (it got all the way to the top of the temp gauge at stoplights and went down a little bit when driving, but still was really hot). When I would gas it, the rpms starting bouncing up and down, and I could hear a clanking noise coming from the engine. I drove it back home since I wasn't far and checked the coolant level and found that it was really low but still had coolant in it. I guess nightmares really do come true.
Take it back to the shop that did the work and tell them they didn't do something right.
Do NOT let your temp needle get to the top of the gauge though, good way to lift the heads on your engine.

I would start by checking to make sure the radiator cap is on completely. That would be my first thing to check since all those repairs you listed do not require opening the coolant system.
