19" rims and tire measurements

Sorry...but can someone explain to me what "offset" is? I always read people upgrading their tire size/rim and saying offset, etc etc. My tires are 215/55/17 on the stock rims and I would definitely want to go with bigger tires when this set is done which I've read people recommend 235/50/17. Does offset apply to that swap also?
