When the fuel gauge reads empty, you still have about 3-4 gallons of gas remaining. So, that would be over 16 mpg going by your math, but fuel gauges are generally not very accurate, so you can't base mpg computations on that. Get a full tank of gas each time you fill up and keep track of miles/gallons.
My 6MT sedan gets poor mileage in the city, well under 20 mpg, but something like 25-26 on the highway with the AC on. I drive about 50/50 city/highway and I end up almost always getting about 280 mi / 16 gallons, which is about 17.5 mpg. When the EPA comes up with the mileage numbers for your car, city driving follows some strict formula with very gentle acceleration, while highway mileage means cruising at 48 mph in the highest gear with the AC off!

Doing the gentle acceleration thing for a whole tank, and keeping it under 70 on the freeway, I've managed 18-19mpg mixed driving.
However, by accelerating with.. umm.. "authority" and not quite keeping it under 80 on those same freeways, I manage more like 14-15mpg.
I've seen as high as 27mpg on a road trip -- though that was in a caravan going about 60-65 the whole way. 24mpg is more what I get when I drive my.. umm.. "preferred" speeds.

typical mixed driving gets me ~350 miles per tank, which equates to around 19-20mpg. No, it's not the advertised value, but maybe if I spent less time mashing the gas, it might help.

Thanks for everyones input...sounds like 18 is the norm. Unfortunately, I live in Houston also. My AC is always on. Should have gotten a MT instead of my AT. I'll do some more testing.
Do those K&N filters really make that much of a difference? Heard about it from some care enthusiats at work, but don't know if its worth the money.

K&N filters won't make much difference for your gas mileage, though some do report minimal benefits, and some report minor increases in HP. The big difference is that basically they are a pretty good deal as they are a reasonably price filter that you don't have to change out, you just have to clean them. So, some economic benefit in the long run, but don't over oil the filter after you clean as it can affect your MAF sensor.

I have a coupe with AT and the mpg seems to be improving as the car breaks-in. Currently I'm at 2500 miles and have been getting about 17mpg. Not great for a 6! I was previously driving a BMW540, which has a V8, and it easily got 17 or 18mpg city mileage at a minimum.

It seems like low mpg is a common problem with this car. I have the AT and average less than 18 mpg with mixed driving. If I do all highway driving, then it goes up to 22-24 mpg. I guess it would be better if I made an effort to drive in a fuel efficient manner, but then the car wouldn't be nearly as much fun. I think this just comes with the territory.
