Drinking while driving

Without a question! I can do all sorts of cool stuff with the VDC off that the car would never let me do otherwise. If you aren't noticing a difference, try staying in lower gears and using (a LOT) more acceleration in the second half of your turns.

But don't do this sort of stuff on a public roadway, of course. I've been to Bondurant Racing School so I feel comfortable doing risky stuff with my G, but until you've had similar training you should probably abstain.

Absolutely. VDC will let the car start sliding, but will then start modulating the brakes and engine to correct (you feel the car start to slide, then it starts hesitating as VDC corrects). With VDC off, it's up to you and you can correct with throttle (or not ). The G will slide easily, exiting hard turns you should be...attentive when adding throttle.

This is with some halfway serious testing, I'm not trying to drift but would rather know how the car will react at 80%, so I know what it'll do in an extreme case...

I wonder how different the AWD will be with VDC off? I need to find some good places to give this a try.

Like I said before, unless you know what you're doing, don't try it. With minimal throttle (30-50%) and proper turning, I was able to achieve a 45-50* angle with extreme ease.

Eh...if you know what you're doing, it just takes practice.
