As for why use email vs. face to face, the main reason is it cuts down completely on the BS. You're not sitting in some dealership waiting around as they play games and they're not doing stupid things like holding your driver's license and preventing you from leaving, etc.
Getting the deal in writing is also very helpful. Ask for the complete out the door price w/ all fees, etc. so they won't be able to ambush you with some lame advertising expense or doc fee or some other junk like that. This way, when you compare dealer quotes, you're comparing full, complete out the door prices.

Back when I was shopping around, the fleet manager at Santa Monica Infiniti quoted me a great price for a car they had on their lot. Of course when I went to the dealership the car I wanted wasn't on any of their lots and added a $1600 destination fee to the OTD price he initially quoted me.
