I'm looking at wheels and I have a question about going from 7.5" to 8" width: If I go with the same offset as my stock 07 G35x wheels (+45mm), can I upgrade the width to 8" without any negative results, rubbing, etc.? ie: 18"x8" +45mm wheels all around.

you will be fine, you can easily go with a 9 and possibly 9.5

 

you have tons of room.

you can go up to a 10" width in the rear and 9.5 in the front with that offset without a problem. what size wheels are you looking for I can help you further when choosing offsets and wheel widths.
