But seriously, Pontiac had a metallic charcoal on the G8 I've always liked.

I have the stupid sahara sand colour right now. I'm pretty much down to black or white, or that lexus ISF blue colour. Which colour would be harder to take care of?

I hate to say it, but unless you are willing to spend some MAJOR dollars on your paint job to do it right, you should really consider just painting it the same color. There is nothing worse than seeing a different color paint job every time you open the hood/doors/trunk/etc. Besides that, it will actually devalue your car.

After the paint job is there a lot of complications with registration and insurance? or is it just a fact of simply telling them?

You can always call them and ask them.

IMO, black is the most sexy color. But be prepared to baby the crap out of that paint job. Scratches appear out of no where and you will spend a lot of time washing it especially if you park it outside.

SofaKing, IMO if you're going to the effort of painting your car (and like VQsmile posted, your jambs, sills, trunk, etc.) you might as well paint it a unique color that isn't available from the factory on other Gs. Otherwise I'd just re-do the factory color.
