Just a couple of quick questions:

On my mom's '07 G35x, the wood trim is only on the dash, it doesn't extend out to the doors, it turns into a sort of suede material. Why is that? I can't imagine that it came from the factory like that.

And I found that I can buy the rear trim pieces here http://www.infinitipartsusa.com/Infi...-.htm?CartID=1
But it says that the front door trim is out of production, where else could I pick up the front trim?

That is definitely some aftermarket suede on the doors. I also read that the 07 wood trim production is discontinued.
Your best option is to replace it all if you want it to match. Order from the 2010+ parts section.
You could also have it all over-layed by a vinyl installer (or DIY) or the guys at CF from Carbon Fiber Elements

Def aftermarket. The new replacements they have now are faux wood... all the real trim started coming off the panels after the crap glue they originally used.

Not to jack your tread but I have been wanting to change out my interior trim. I have been looking at a stock redwood trim being i have the washi trim. Also would like to add trim such as a wrap to the steering wheel as well like premium luxery vehicles have. Anybody find high quality trim replacement for our vehicles? Washi vs. Wood Trim any thoughts?
