I have a 2004 G35, 2 days ago I threw the icon on the dash. Yesterday after I arrived at work it started to over heat. So I figured the thermostat was bad I changed it. Then I bled out the air I don’t think it was the right way. But it was staying fine so I left got down the road and it started to rise up again. It wasn’t blowing hot air and I noticed my fans wasn’t kicking on. Could it be a sensor or maybe air in the line or both? Kinda throws me off with the light on and fans not working...

The fans are a common failure point of these cars. Try removing them and powering them up with a battery, most likely one or maybe both "speeds" (circuits) aren't working. Try flicking the a/c on to see if they will come on at the 2nd (high) speed.
If it doesn't blow hot air you have air in the system. No idea about the fans but I had problems with no heat and it was air in the system. I bled it with a lisle funnel and no more problems.

There's 3 relays in the IPDM you can test, fans you can test, if you're not blowing hot air from the AC you probably didn't fill the system correctly and trapped a bunch of air in it. You cannot just dump coolant into the radiator, open the bleed screw add it at a rate of 1 gallon per MINUTE, any faster and you risk trapping bubbles, when coolant starts to come out of the bleed screw put it in and start, Lisle funnel helps burp out the remaining air once you have it properly filled.
