2007 g35x awd 4dr
I have a 2007 Infiniti g35x. 3 days ago my belt snapped. I replaced it, but after replacing it, it snapped again. I have changed it twice and it snaps it. I noticed it smelled like burnt rubber and I also noticed the cooling fan pulley was a little stuck and there was a little
burnt rubber on it. What do you guys recommend? I want to try everything in my power before giving up and calling a mechanic. Any feedback is very much appreciated, thank you.

Spin all the pulleys by hand and verify they turn freely. If there is a seized bearing it's just going to smoke the belt.
The HR engine uses dual electric fans, you don't have a cooling fan pulley.
You are tensioning the belts properly with a tensioner gauge yes? Something like a Gates 91107 and Gates 91132 will have good range for these cars, I think the big belt is 200 lbs and the AC belt is 125 lbs for NEW belts. Check the FSM to verify though.

Those are common off-the-shelf items at most parts houses. The bearing probably blew/overheated/froze up.
I'm not familliar with that exact one but there's usually just a single bolt in the middle that you rattle loose, someone else might be able to help you out with the torque specifications if they know if off-hand, else you can check the FSM.

Should be somewhere under EM - Engine Mechanical.
EDIT: EM page 24, 21 ft/lbs.

Rockauto lists ~12 idler pulleys for an '07 G35. Looks like 8 of 'em are good name brands like Dayco, Continental, AC Delco, etc (ranging from $25 to $55). Having that many choices suggests to me that Nissan is using a fairly generic idler pulley so getting one locally shouldn't be an issue at all.
They typically aren't too complicated to replace. Getting good access / clearance / room will be the worst part, I'm guessing.

I ordered a set of hoses and an idler pulley with belts for an NA Miata, a very simple engine. Went all Continental. Only half of it was usable. Hoses were all the wrong IDs and the idler pulley was for a Buick 3.8 which they claimed it should also fit a 1.8 Mazda (it wasn't even close).

Is something out of alignment? Did you reinstall something that uses a pulley without the shins or with washers it didn’t have before? Are you sure the belt isn’t interfering with something? Does your AC clutch cycle on and maybe resist it?
sorry if you’ve explained any of that above.

Are they maybe giving you a coupe belt (older model and engine) than the redesigned 2007 model sedan belt?

I have an '08 and Autozone says the belt is 810K7 for mine and that appears to be what you have on there as well. The '07 and '08 should use the same belt. I see multiple references to that same p/n with Advance Auto, Continental, etc. Even if you didn't install the idler pulley 100% right, I'm hesitant to blame that since the idler is smooth and can't shred the belt. It also doesn't "align" it to my knowledge. It is only for changing direction of the belt, I believe.
