Im from New Hampshire in the states.

are you getting show tires? if you are, i highly recommend the hankook w300 ice bears.
awesome tire in the snow. and they also have some good dry handling for when the roads are well plowed

I too am getting a 2008 G35S 6MT soon, and I think same color as you. Platinum/Diamond Graphite? Not sure what its called in Canada, I'm in the states.

As for snow tires, best i recommend is Dunlop Sport M3s, which is what I had on my 04 coupe. Now on my G37 coupe I have Blizzaks, and they're not nearly as good.

I'm going to go out on a limb here and guess that you are asking, why does the slip light blink when you hit the gas hard...
This is basically telling you that the tires are slipping due to excessive acceleration. The stability control kicks in, decreases the level of power to the wheel and saves your butt (and tires).

The question here is, with a brand new G, why are you mashing the gas and causing the tires to slip?
Did anyone explain to you about the break-in period, or are you just gonna drive it like you stole it?

having the car protect you and prevent you from spinning your tires and crashing is NOT considered a "problem" its considered a safety mechanism

if you are considering to take your car on the track, because this forum does not condone street racing, then you need to learn how to do a proper launch

yet again, welcome to the forum!
