Can you drive on the street with race slicks assuming it's not raining or anything of course?
I mean what if you want to drive to a track day on your race rims/tires setup?

There are street legal slicks, so just buy thsoe and get on down the road. BFG,Nitto, Mickey Thonpson, Toyo, Hoosier. There are quite a few. Rims sizes will be your next issue but there are some larger sizes out there. Be careful on cheaters some are mostly nylon-great hook up but not great high speed handlers.
They'll be going on some 18's. I'm not going to track my heavy@ss Volks.
So any "DOT Approved" racing tires will do then right?

Typically the issues with not DOT approved tires is that their wear is unusual. The wear rating is probably horrible if it has one compared to normal tires. Regular slicks are also not to great with handling (drag slicks). So if you have to , do it. Otherwise your wasting your money on using slicks up just driving around.
