Manual is always good, but an easy way to get some pretty crisp image quality is to put it aperture priority mode and set the f stop to f/8, f/10, etc. That tends to be the "sweet spot" with most lenses in terms of overall image quality, and it gives you great depth of field. That obviously isn't a very big aperture, so you'll want to keep using that tripod unless you have some very good light.

What camera are you working with?

On the top left there should be a dial with " A P S M " and such.

A= aperture priority
P= programmed auto
S= shutter speed priority
M= manual (obviously)

With Nikon, anything with a gold ring is gold ring around it is pretty high quality. Something fairly wide angle in the focal length department is usually pretty good for cars and lenses with a maximum apertures of f/2.8 and such tend to be high quality, although you don't have to use the f/2.8 all the time. Good luck!

Lol Gee there are no places to offroad around here. The only time i have driven offroad in this was at night, in a parking lot, and didnt see it abruptly turn to grass and the next thing i knew i was out in a field.

This winter i will do deep snow excursions then take pics. It is what im going to be driving so plenty of time for fun.
