Straight pipe?
I know here in florida we don't have immisions test anymore, does this mean I can get a straight pipe installed and remove my Cat. Converter?
If its legal to do, and recomended then, can anyone point me to a mechanic who'll do the procedure, and the estimated cost?

Darn..
Just to smash the myth though, does it give a gain in HP? or does it mess with the exhaust tuning so bad its very detrimental to do so? I know the O2 Sensors around there, and thats needed for the fuel etc.

Believe it or not, but it is a FL law that NO exhaust system may be modified from stock. Period.
Cats are done under the EPA's Clean Air Act of 1990. Ilegal to modify unless the vehicle is 5 years old or has 50,000 miles.
Straight pipes are completely illegal...with up to a $5,000 fine if you are caught with the cats removed. As you said, however, we don't have emissions tests here in FL, so there is a very slight chance of you being caught. The only thing that could give you away is the bad smell.
Most shops won't install test pipes as a regular service. It is their legal duty to report any cars that come in that are missing catalytic converters. That said, I'm sure you could find a shop mechanic that would be willing to do it "off the records."
