Definitely take a MSF course, I know in Maryland they have different levels of the course. The best route would be to first find someone that has a bike, learn the basics then take the second level MSF course. The riders are a bit more experienced and they move at a faster pace (i.e. they say "hop on the bike and ride around" as opposed to "lets sit on the bikes and walk around in a circle"). The course has saved me from road rash already.
Oh, and bikes... you should probably start with a bike that sits the rider upright, like an SV650 (they say it's easier to learn on these). However, I learned on a 600RR and know people who learned on 1,000 CC bikes, so it's not impossible.
