I drive an '05 LS G35 (auto, premium package, and now has OEM 18s) but when I dynoed my car w/ 17s it had 225 rwhp and at least 215 rwtorque. Not only that, but the guy who dynoed everyone's cars said their dyno was underestimating everyone's cars by a couple rwhp (between 1 to 5).

I went with a s2k club (s2ki.com I think). My friends invited me. I was pushing out the most power in my auto, stock G35. It was really funny. They had difficulty pushing out over 200 rwhp. I know it doesn't mean that my cars faster (b/c our cars are fat pigs) but I thought it was still funny. I was king of the day until my friends came in their corvettes and owned us all. -_- They were pushing out 350rwhp to 410 rwhp (Small mods, all NA). -_- AND their cars weigh the same as 350z's. Those cars are too fast for their price. Lol.

The weird part about my car was that for some reason my car only went up to 140 mph when I had my 17s. Now that I have the 18s they stop at 145. It was so embarassing when one of the salesman said he got up to 135 in his V6 camry. I'm like 40k car and I topped out only 5 miles per hour faster! And I'm in a sports car!

So I'm pushing out good power, but for some reason my top speed is limited. I hear people pushing out close to, equal, and sometimes more then the 155 top speed it's supposed to hit. Why doesn't mine?

You cant compare dyno readouts from 2 different dynos, sometimes even from the same manufacturer. There are so many factors that come into play, the only use of the dyno is to serve as a good indication of how much your output has improved from when it was originally dynoed.
You have
1. Wheel size variation
2. Gear variations
3. Ramp rate variations of the dyno.

It dosent mean that if you have a recorded 220 bhp at the wheels, that your car is more powerful than the dude who did 210 at a different dyno, neither can you conclude that your car "actually" has 220 bhp. It only serves as a rough guide.

The best performance measure is still absolute, in this case, your loss to the 350z, which technically has an advantage given its slightly lighter weight.

Ok, sorry it took so long. I did run up to the local gym (side streets and about 3 miles away) without my seatbelt. I got on it pretty well had fun with an IS300 at a light. Anyway, all the power is still there, even without the seatbelt. I'm still recommending you keep it on though.
