Regarding spacers and winter wheels....
I have 10mm spacers, and looking for winter wheels/tires. If I find an 8 inch wheel that has a spec of +35MM offset then factor in my 10MM spacers, would it be +25MM? If true, those may stick out more than my current setup which is flush now. Current wheels are M45 sports (8.5 inch?).
And, if I can't use the spacers, are there longer lug nuts available to use over the longer studs that were installed to use the spacers? lol.
I'm not removing the studs, I wouldn't think that would be a good thing for the hub to repeat again and again.

8" wheels +25 offset will be OK. In fact, I was thinking about going with 20 mm spacers with my M45 rims.
Right now, w/ 10mm spacers, your M45 rims are basically 18x8.5 +40 offset. Going to 18x8 +25 would move the rim only 9mm further out to the wheel well. Since your car's not lowered, it will appear to stick out very slightly past the fender, but when the suspension compresses, it still shouldn't rub your tires as your tires will camber inward.
As for longer nuts, I'm not sure if that's available. However, I think there are open ended nuts you can use where the bolt can protrude past the nut.

Can't believe I'm so picky about my wheels, let alone ones just for winter. I can't settle for 17's and dropping down to 18's kinda sucks for me too. They do make 19 inch snow tires, so there. I just don't want to use my chrome wheels with all the salt around.

Did you keep your 18" stockers? If not, maybe you can pick up a set of 17" stock G35 rims. I think those are a good looking design and their 17x7.5 +45 offset would work perfectly w/ your 10 mm spacers.
Here's the open end lug nuts I was talking about. You should be able to pull the 10 mm spacers off and use these lug nuts to properly tighten a +35 offset rim on. The bolt will extend past the open end part of the lug nut.
