Anybody running temp sensors on their differentials?
What sensor/gauge combos did you use?
I understand it's generally unnecessary for daily driving, but I just like to know things while driving that most people don't think about.

Also, has anybody changed out the drain and fill plugs for square drive instead of hex?

Pretty much the only people running diff temp sensors / diff oil coolers are race car guys. Usually the diff temps are not something you have to worry about on this platform. As for the switch from hex to square, up to you. I’ve never stripped the hex of that size.
Have you considered other diff upgrades like the diff bushings swap, subframe colors, and/or a differential brace?

I just use a cheapo infrared heat gun and shoot the diff cover. Highest I've ever seen was like 180F.
If you are concerned with diff temp the first thing to do would be a finned diff cover to remove heat. As for a temp sensor, only time I've ever seen them is when someone had plumbed the diff with a cooler and you wanted to use a sensor to turn on a cooling fan and pump. Those things are usually pretty expensive though, mostly because of the pump.
I suppose it would be easy enough to just drill/tap and put a generic oil temp sensor and run wiring back to a gauge though. If you didn't want to modify the diff carrier you could add it to the cover which is just a thin piece of steel. Weld on a threaded bung would be easy.
