265's in the rear, 245's up front, they will look nice and meaty on the 19's, but not bulging out either

Can I go 265/35/19 in the rear and keep the stock 225/40/19 in the front until I need new fronts? I think the rear is 1.553% difference in speed and I'm worried about messing up the VDC signal.

I wouldnt recommend 245/265 on the stock 19's.

Fitment isnt gonna be right at all.

I'd like to do this setup when I switch out my tires but I'm curious to see how they will fit with my spacers (15mm front & 20mm rear) and 350z H-Techs.

What are you talking about? Some people even put 275's in the rear, even as was posted up above. 265's will fit perfect in the rear

He's right, your wrong. "Some People" do a lot of things, that doesn't make it right. 275s on an 8.5" wide rim is simply not the right thing to do. Look at any tire manufacturer's spec sheet for the proof. Reputable tire dealers wont install due to liability issues. 265s, while not being recommended by any manufacturer in their spec sheets for installation on an 8.5" wheel, will fit, and is the very widest tire in a low aspect ratio that should be squeezed on the "G" 19" wheel.
