What I don't like about shaving is it weakens the edge of the fender line. Rolling helps to maintain that strong edge, while shaving removes it.
The best, but most expensive alternative is to have the inside edge snipped so its in small sections, rolled flat against the inside of the fender well then welded, which reinforces it. This does require repainting of the area, but it makes it stronger than it was before while giving you more clearance. Check out philthy's thread, I remember that's what he had done to his car.

You can repaint it, I wouldn't go with just clear though, a coat of primer/sealer follow by clear or color would be ideal, clear alone likely won't stick very well and will eventually start chipping.

f1 did a pretty good job shaving my rear fender
however when i get my coils put on i'm gonna ask them to shave off some more because both sides werent even. damn my obsessive compulsive disorder.

when they put on my rims they shaved the fender too
from what it looks, if they didnt shave the fender, my 285/35/19 would be really close to the fender so i suppose if i went over a bump it would rub
i've been told that 275/35/19 with stock suspension would be fine but you should confirm it.
