I saw a NISMO Z on the lot and liked the gunmetal wheels and was thinking of getting a set.

If you keep your eyes open used sets come up. There was a set of 18/19" 350Z Grand Touring Rays Track wheels that sold this month in our area on one of the sites. It sold and he was asking $1500 for the set + tires.
These rims are also similar to the Nismo rims they were on the 2006 and 2007 350Zs with the Track and Grand Touring trim packages and the fronts were 18 x 9 and the rears were 19 x 10"

Yup, same specs are the nismo wheels, but silver in color, and they have 3 dots on each spoke rather than the line on the Nismo's. They are much easier to find and cheaper since the NISMO Z's are limited edition

I have a chance to get a set of the 19" 350z track wheels for my 04 sedan. I really like the idea of 19x9 and 19x10 wheels on my car. It will finish off the OEM sport look very well.
I am prepared to do rear fender rolling and fit a slightly smaller tire to make them fit if need be.
Has anyone tryed this or have any other imput on it.

if so, then these will not even come close to fitting on your sedan, even if you roll fenders. most guys runs 8.5 in front and 9.5 in rear. 9 and 10 will not fit unless offsets are very high and even then I am not sure because you may run into issues with hitting the suspension.
your best bet for a sedan is to 19x8.5 with approx. +38 offset in front and 19x9.5 with approx +45 offset in rear with 245-35 and 275-30 tires. this way you will not have any issues with rubbing and having to roll fenders.
I use to own an 03 sedan and went throught this already. good luck.

+30 F and R with 9 and 10 inch rim is kind of conservative for coupe, but would be sticking out past fender line on sedan.
