275 tires on an 11" rim, too stretched?

Yes that is exactly the case. I can either get the wheels I'm talking about or just buy new rears for my existing wheels and leave it at that.

Function and reliability are first and foremost on my priorities because I don't have time to basically do anything if stuff goes wrong, so I want to keep potential problems to a minimum.

Also depends on the tire, since they're not all equal. I was running 275/35/19 Dunlop on 19x11 and just switched to a 285/35/19 RE050A, and I like this fit much better.

I just had 295/30/19 Hankook V12 Evos put on my 19x11 and they look almost square on the wheel, the 255/35/19 looks very minimally stretched as well...I'm super pleased how they came out.

275/35 shouldnt be too bad, make due with what you can I suppose.

I remember seeing a thread of yours where you've had many wheel/tire combos, do you have any experience with Vredestein Sessanta? They're the tires on these wheels, from my searching I've found that they run on the narrow side.

OP, I take it you havent seen these wheels and tires yet? I think I read a post of yours in here saying you were buying an already mounted wheel/tire combo hence the reason you are kind of stuck with this size combo.

as for daily driving or the limited amount you said you will do, the size will be fine. It will be stretched, but the 35 series side wall is a much better option than a 30-series on the same rim. When they run out or you have the loot/time to switch them out go with at least a 285/35 or a 295/30 from most companies will work too.

someone on the first page mentioned they're experience with the Vredestein in this thread as well...i've only heard lots of good things about

You should also take the side wall in to account. You can run a narrower tire with a bigger side wall. For example (at least from my understanding), a 275/35 would be very similar to a 285/30. So I think you have to consider the side wall as well.

They will be similar in height but the 275 will be thinner than the 285. The width of the tire is the problem he is facing, not the height.

No, that's one of the few tires I haven't yet owned but would really like to try.

I know. I'm saying that a higher sidewall tire with a thinner tire (when stretched) is similar to a lower sidewall tire with a wider tire. The sidewalls are obviously important in determining what your stretch looks like. To give a more obvious example: stretching a 275 tire with a 30 side wall is way different than stretching a 275 tire with 55 side wall (not sure if that even exists). The sidewall bends and becomes part of the width. Does anyone know what I mean? haha
