Coupe with fully rolled fenders and camber control I daily this car 3k miles a month.
rims are 19x11 +0 +12 +22
I am thinking 19x11 +12 front on a 245
19x11 +0 rear on a 255 or 265
any other ideas on what would fit better? I dont want the rim to hit the fender or for the camber to be too extreme.

At your height, I'd prob go with the +12,
I used to be at 19x11 + 10 with a 235/35 Michellin PS2 tire, which run super huge, but still gave enough clearance so I wouldn't rub
Camber was -3.5

do you have to be stretched? You could easily fit 19x11+22 in the back with 305/30/19s with little camber work needed. For the fronts, I guess you could try to stretch a 285/30/19 on the 19x11+22 or +12.
For reference I have 19x11+23 with 305/30/19s rear and 19x10+20 front with 285/30/19s front. No rub at all with this setup, lowered on Cobb Z-springs.

No, the front was 19x11+10 before I added a 10mm spacer.
Rears were 19x11.5 -3 with a 265/30
