Wouldn't the signals need to be converted to balanced-differential?

No sir. Ive been doing this in Maximas/Nissans for years with no issues. Including my own current car. Easy for us installers to do, and inexpensive for the customers.

So to install an aftermarket deck in our infinitis, all you need to do is convert the deck's preamp outs to speaker wires to facilitate connecting it to the input wires going to the stock bose amp?

No problem with the aftermarket deck outputting higher voltage (4v preamp outs, 3v preamp outs, whatever) and the stock Bose expecting < 1?

^ You might need a converter to drop the potential or else sensitvity will be off, but I still think this is a crappy method.

Thats correct. The only thing needed from the aftermarket HU would be 2 sets of preouts for obvious reasons. This has worked flawlessly for many years with all HU ranging from entry level to Eclipse 8V units.

If it was that much of a crappy method, I dont think Metra would have been selling the 70-7551 harnesses for so many Years.

The Bose speakers and amp really are terrible. In particular the tweeters up front are atrocious. If you're going through that much effort for aftermarket up front gear, you should finish it off right with, at a minimum, new components up front and a good amp to power them.

What I want to know is, just how crappy are the wires connecting everything? I plan to replace the HU, amp and speakers, but I would really, really like to use the existing wiring if at all possible. (I find running wiring a real pain, lots of time spent for small gain. Maybe I'm just not a patient person.)
