I use to have Pioneer DEH 2700 in my previous car, no amp and subs.. Can I achieve comparable sound quality in my G35 without changing HU? Or this is will be just waste of money and time?

You should be able to get decent sound quality out of the stock HU. What you will miss out on are features and tuning ability. My guess is that the quality of the OE unit is probably better than most low end head units.
what I have heard is that you need to grab the outputs from the head unit not from after the bose amplifier. If I were going to do that I would probably want to add some kind of equalizer or sound processor in the trunk. Not like a cleansweap - but something you could actually tune with active crossovers and some sort of equalization to get the sound the way I like it with the HU controls set flat.
