how would the wheels feel and act road wise.

I was lookin to pick up some wheels 20x10.5 in the rear and 19x 9.5 front. tires would be both 35 series in the front and back. I haven't dropped my car, but most likely I will be get coilovers. so the height can be adjusted to wheel size for front and back. the offset in the front is 24 and rear is 30. they are volk wheels with big lip in the back. I wanted to get something aggressive but didn't want to have to roll my fenders will I have to do this with my g35 coupe, its the one with the sport suspension (factory)

please help I most likely will be buying these this weekend.

you should be getting a 30 series in the rear if you're running 20" wheels. A 285/30/20 is perfect. for the fronts 255/35/19 is perfect. you'll keep the same overall tire diameters as the stock setup with these sizes.

will i need to roll my fenders, and what does that involve. I know it something to do with bending/rolling the inside of the fender I think. but does it change the outside appearance of the fenders.

275/35/20 has a overall diameter of 27.58" where as the stock 245/45/18 is 26.69", so it's almost an inch larger. The 285/30/20 has a diameter of 26.74" which is much closer to stock and a better fit. rolling fenders all depends on the offset of the wheels.

As far as feeling the difference, yes you'll notice it feels much more slugish and braking will not be as responsive. If you want performance stick with 18" wheels....on the other hand it looks much better with 20s.
