EGT is old school- I vote oil temp. Helps at the track and day to day trying to figure out when you are really over heating and when you're warmed up.

true but you can use the Oil Pressure as a guide if the Oil is warmed up. I know it is not the best way but on cold start or the first 5 mins your Oil Pressure tend to be a little high, so what I do is wait for it to get to normal then that gives me an Idea.

i'd say EGT, since any problems will show up there first. if you know how to interpret the temps when used in collaboration with other gauges you can determine if your a/f is off, if your timing is off, even if you have a carbon build up (increase in compression) etc.
oil pressure gauge would be up there too, though.

Oil pressure gets my vote, could save your engine if you blow an oil line. It's also a good way to monitor your engine in a sense that you get used to seeing a certain oil pressure at different rpm or on start up and when hot.

Okay as far as the oil pressure goes, will it show a loss in pressure if there is a leak, or will it let me know if it is a more seriosus problem like a broken line? Sorry for all of the FI noob questions, but I am new to the FI thing.

A broken line will show when the pressure drops to Zero! I have Nexus gauges and the Oil gauge will turn red if that happens. Really hard to miss it.

Actually, the Nexus gaues (which I have) are programmable; you can set the alert feature to anything you want. So, you can set the boost gauge to alert if you overboost (at a programmable boost level), the oil temp gauge to alert if you go over a certain temp, the pressure to alert if you go under a certain pressure, etc... All alert levels are programmable.

In addition, the Nexus gauges are color changeable, and the orange matches quite well with the G35 stock gauges.

All in all, I love my Nexus gauges!

I cant decide if I want nexus of defi imperial either, I think they are both even?

They look nice, do you have any reviews on them?

Also are you still getting your car done at VTR, if you are let me know I want to stop by the shop and see it.
