I keep the VDC on all the time. It's safer for me.

On unless I'm having fun.

What happens if you have it off, your right in the middle of a big drift/powerslide (sideways w/tires spinning) and you turn it on? Will it kick on and slow you down and straighten you out? Will it over correct you? Or do nothing?

Commuting to my job an hour away I have it on, but in the city, off. I don't like when I tromp it and it bogs down. Doesn't make me feel very safe, when I do something, I want my car to do it, not correct me. I'd rather have a little wheelspin than having vdc on when it comes to gagging out in front of someone, you can always let off or bang second to get traction back, idk. maybe it's me, but I like having control of the car. once you've driven the g enough to know it, vdc off isn't bad at all. it's actually become what I do when I get in the car. Start, adjust the AC/heat, turn the music off, put it in 1st/reverse, disengage e brake, roll out

I got to say, the search function never finds what I'm looking for.

Its not that it takes longer it just takes more for it to kick in. Like you would have to pretty much get sideways and then it comes on. Im turboed and always keep it off because of spinning tires and for some reason in 5th it likes to randomly kick in when nothing is going wrong. I believe if you properly know how to drive a car then you should always have it off because sometimes it can get you into more trouble. But if not then leave it on.
