So for some time I have been hearing this weird noise coming from the rear of my car, 04' 69K Miles 6MT, sounding like a metal tick tick tick that progressed as I went faster. Just recently I've started hearing this humming noise as well. So I took it in to the dealership, they did the inspection and it turned out that I needed new bearings in both rear wheels. What are the chances?! Anyway it ended up costing about $900 to have all the work completed. Any opinions on this..? Also they are saying I need a Coolant flush, Trans. flush and a Differential service what is that and is it necessary?

Yeah you overpayed lol. Everything to do a bearing is under 100 bucks and basic hand tools. Do the flush's yourself or bring it to one of the "lube" places its hard to mess up. Just drain plug and refill.
bearings cost around $50. It's not that hard to press them your self using pulley removal tool or you can take it to a local mech shop and have them press it for you for $20

the fronts don't need to be pressed in, its about 130-150 at the dealer. there are 4 screws on the back

Not sure what you mean. I am trying to do it myself, but I need to know how to do it first. The other members here have stated that to press the bearing to the hub assembly for the rear you have to take it to a shop. I know for the fronts now that I don't need to get it pressed, but I still want to know how to do it in the future when the rears go out.

Its not uncommon, I had to replace both rears before 55K.

there is also a company called Timken that makes bearings as well. Don't know which quality is better OEM or Timken. I changed my rear bearing and replaced with Timken bearing. Cost is the same.
Now on to pressing.
I don't have any pix so I'm just gonna explain it and use some pix provided by drsifu1 in his thread.
This is the tool I used to pull bearing off the hub
In this picture drsifu1 is using it to pull hub off of half shaft. On the front hub (unless you are 4wd) don't have a hole through it (check picture of ebay item I posted) So you don't have to pull hub off of shaft. All you do is undo 4 bolts and separate bearing/hub assembly from Knuckle.
Then you use the tool to pull bearing off of hub, clean hub up and use a same tool to pull the bearing on. Simply reverse the process. Tool centers it self so you don't have to worry about pulling it sideways or something. Just do it slow and watch it, don't use power tools on a tool, do it by hand.
