Cross a couple wires in a harness or something? lol
Sounds like an on/off circuit (trunk release) crossed with a gradual circuit (climate control), thus the climate control is only fully ON when you turn it on, and the trunk release doesn't get enough signal to open with the gradual circuit.

For the trunk release, the wire harness located near the VDC button probably got loose when you dropped down the driver panel below the steering wheel. Also, check the trunk release delete wire harness that is located to the left in the lower glovebox. This may have also gotten loose when you dropped the lower glovebox down.
For the AC blowing high constantly:
Problem #1: Loose or disconnected in-vehicle sensor wire. This is located on the driver side panel located under the steering wheel. When you sit in the driver's seat, the sensor is that little 2 inch grille by your right knee. Check the connection and that can come loose when you drop that panel down.
Problem #2: AC harness not properly reconnected when you put your HVAC unit back in. Remember there are 2 little retaining clips that lock in the main AC connection harness that if not correctly reconnected, the AC controller will malfunction. This is probably the you are dealing with. Try disconnecting the 2 clips, the wire harness, then plugging it back together *carefully*.
hope this helps. I have run into the AC problem myself as a lot of other people as well. The trunk release malfunction is foreseable b/c of the wire harnesses you tug at dropping the required panels.
Attached pictures are of the AC retaining clips.

Check my pictures in this link to see where the in-vehicle sensor and its wire harness are located...
