Why is not having a sunroof desirable to enthusiasts?

Those would be the 2 main reasons.
Serious racers (road and autocross racing) find that they can't wear a helmet in most cars with a sunroof, so when they set about looking for a car to modify to race, a lack of sunroof is very desireable.
Also, depending on the car, not having a sunroof sometimes gives you a structurally stronger vehicle. (sometimes)

Yeah, but people in general never seem to want to have any sort of open windows at all it seems.
Up here in the northeast, i notice nobody really seems to enjoy windows down motoring anymore. We go from the heat in the winter, directly to AC when the first warm day in spring arrives. People seem to totall ignore the month or so of perfect sunroof open, windows down weather.
I have my sunroof open whenever possible. Even in the winter, it's at least popped up for ventilation. But as soon as it hits 50/60 degrees, if it's sunny out i'll open it.
