Well I took a few pics with the stock suspension and 19" Volks. Its definately up there but I dont think its really that bad I was just used to it being really low to the ground. Its kinda hard to see with the shadows but you get the point.

as much as I'd love to lower, I too found so many clearance issues even at stock height. Worst place ever was some of the 50s era parking garages over in Savannah and Charleston (road trip). OMG. Even at an angle, I scraped alittle. I avoid new speed bumps.. although they are ok after a few months of use.
I think your stock height looks fine.. the Volks rock.

I agree.....aftermarket wheels do seem to enhance the gap for some reason. However, I think the darker the color of the car, the less dramatic the gap looks. Black colored cars seem to hide the gap better than most colors.......your blue should hide it pretty well.
I know my IP will scream out, "HEY EVERYBODY......LOOK AT THIS GAP!!!!"

TEIN H-Techs for the 350z will give you a nice drop that is a little higher than the S-Techs and should ride pretty much like stock (except for the bumps will be a little more noticable).

That's a question best left to GSedan35. I'd think the car would be lowered some, but exactly how much I'm not sure. Don't forget, your 05 is almost the same height as my 2004.5 with sport suspension (with the TEIN's H-Techs for the 350Z). My car is maybe 1/4" lower than yours at most. IMO, the 2005's with the sport suspension look really good at stock height and if you keep it stock you won't have any additional camber issues... just a thought.

I plan on leaving it stock since I am ok with it as is right now. It will only take me a couple days to get unused to the look of the S-techs then I will be totally at peace with it.
