Yes they're easy to install. I did it in about 25 minutes the other day. Only hard part is the position you need to be in to get down under there. Just pry off the old rubber ones and the new ones fit on the same way they came off. Nice and tight, no slip.
I just used a moderate flat head screwdriver to get the pad lip over the pedal. Just get one of the ends started then run the screwdriver around it to get the rest of the lip over it.
The gas pedal goes on with a bushing and a clip. All pretty intuitive to do.

6mt pedals are a bit harder being smaller and having 2 to pry on (brake & clutch). previous tips included using a hairdryer or soaking in warm water (caution for rust potential) to make them more pliable. Another was to use silicone spray or other lubricant.
Once on, no issues at all with moving around.
Factory pedals are fine, but I suppose you could put them on again. Taking them off is WAY easier than putting on, so they don't get destroyed taking off.

I have 6mt (handbrake), so I can't say for sure, but I've read that the parking brake is not a direct replacement. Some people have glued it on, screwed it on, and even cut away the factory rubber to get it to fit. Sounds pretty nasty, so read up on that first.
