I would think that the 8.5 in wide width would be a little too wide....I would stick with the 8 inchers, that is still an inch wider than stock. I mean the 8.5 in width ususally uses 265-275 tires - you wont have those all the way around on a g35. The 8 in width, with maybe a 235-245 would be a nice improvment over the stock 225's.

why not? cars with 245's come with an 8 in wide rim such as my GTO(17x8 stock). Move up to an 8.5 in rim, you can run a little more width such as 255-275.
I actually have some Nitto drags in a size 275 on a set of stock 8 in rims, and they work perfect on my goat - they are the widest tire you can put on the GTO without rolling the fenders. This is because the Nitto's run narrow though. I wouldn't put any other tire in a 275 on a stock GTO as it would rub.

whats the better setup. i am on planning on dropping the ride only about a inch or inch/half.
