5w30 and 10w30 are the same viscosity when hot (Where the "30" part comes into play). When cold, one is a 5w (Winter rating, not w as in "weight") and the other is 10w. All things being equal, I would run 10w30 if you're in a warm climate. Reason being, the closer the two numbers are together the fewer VIs (Viscosity Improvers) are required to attain that viscosity spread which means there's less chance of viscosity breakdown.
Once up to operating temperature, both the 5w30 and 10w30 have the same viscosity.

The best non-syn oil I've used is Castrol GTX; in an independant study by Sport Rider magazine, they concluded that the GTX is the most comparable non-syn oil towards the synthetic versions.
The best Synthetic Oil I've used is Amsoil. I tried Royal Purple, Torco and, Redline...they're all good synthetics..but I believe they're synthetic blends...not pure synthetic like Amsoil - I could be wrong though.
Oil Filters, so far...I like using Honda's filter. Im not too sure on the model it's supposed to be used on...but I saw a picture of the Falken G35 with a Honda oil filter and I thought that was good idea. after evaluating the size between the Nissan and Honda oil filter, the Honda oil filter is longer, thus having more filtering area. You could always buy one of those expensive stainless steel element filters, that are reusable. from what I read, they filter out things better. I think they're like $100 or something...I have something similar on my motorcycle, and its worth it. I may be looking to getting one for the car.
It's all in preference, the one thing that should be more pressed than just choice of oil is, frequency of oil change.
