For ramen, you HAVE to go to Santouka inside the Mitsuwa in Costa Mesa. IMO, it's better than Shin Sen Gumi.

I honestly don't vouch for roscoe's in Long Beach, no offense. I mean their waffles are good, but not for the price their giving it. It tastes the same as KFC chicken to me haha. And they didn't want to give me my gravy.

I do recommend Little Ochoa on Carson & Orange in Long Beach. :] Best place ever, they give you a lot for your buck. You'll find my G sitting around there ;]

I work in Gardena, so here are some places in South Bay. Mostly around a 5 mile radius from my office (Gardena, Carson, COMPTON). There's so much more places to go to, but these are the ones I keep coming back to. I included some recommendations.

Burnt Tortilla (Machaca, Machaca, Machaca)
El Antojito (Pretty authentic taco truck)

Peruvian
El Rocotto (Gotta try the Pescado a lo Macho)
El Pollo Inka (The free chicken soup will keep you coming back)

Japanese
Furaibo (Tebasaki wings! So much more at dinner)
THE Express (Marukai market - good basic stuff)
Azuma (They don't serve plates, it's more like PLATTERS!)
Sushi Yoshi (Fresh, cheap sushi - I prefer this over Sen nari)
Spoon House (Italian Japanese - very different)
Curry House (Menchi Katsu Curry!)

Chinese
Tasty Kitchen (Lunch specials are great!)

Vietnamese
Pho Hong Long (Great Pho)
Thai Lai (Bun Rieu is my favorite here)

Jay Bee's (Great Memphis style BBQ)

If you like Japanese-style Western cuisine, Cafe Hiro in Cypress is good also.
