I have an 07 G35s Sedan and purchased a new set of rims, 20x8.5 front,
20x10.0 rear. my question is what size tire should I purchase that will not cause any fitment issues i.e. rubbing etc. The car is stock.

I think that you are going to have to stretch the tires a bit to keep from rubbing.
30mm offset would be more ideal for the front and 45mm for the rear, if you dont want to stretch your tires.

Yea, you won't need to stretch.
The rear might be an issue if you decide to lower it a fair amount but at stock height you won't have an issue. If you do lower it just let the camber takes it's path and you'll clear the fenders fine.
245/35 and 275/30 is my recommendation ad well.
