done a ton of reading, but I'm just not sure if what I'm thinking is feasible or not and on the front which offset would be better....
05 G35 Coupe BC Racing Coilovers (aprox 1" drop) z1Motorsports front adjustable upper control arms, rear adjustable toe, traction and camber arms, hotchkis sway bars with whiteline endlinks. camber is set at -2 and I don't want to roll the fenders
current setup: square18x8 +30 with 245/45 Fuzion UHP Sport A/S tires...
what I'm thinking: 18x9 XXR 526 rims with Hankook Ventus V12 evo2 F: 245/40 +25 or +35, R: 275/40 +20

ok after much research and many headaches - cause I just dont get this **** here's what I've decided should work....
the idea is to drive the car on the road when I want and to also do 4-5 track days per year
car has BC Coilovers with about a 1 inch drop all around, -1 camber all the way around and adjustable front upper control arms and rear adjustable camber and toe arms, fenders are stock and would rather not have to roll them
current set up is 18 x 8 stock setup.... which i believe offset is +30 and I'm running 245/45/18 all around
my plan is to go to: Ruff Racing RS2 wheels and Michelin Pilot Sport A/S 3 Plus tires
front: 18 x 8.5 +20 with 245/40/18 - was toying with the idea of 255/40/18
rear: 18 x 10 +25 with 275/40/18
so the question am I right in my assumption that this will work or am dumber than a box of rocks

You know your current specs, just take a ruler and see if additional 16mm in the front and 30mm in the back will be an issue without rolling.
The specs you are asking about are quite sunken in. Do you care about how flush the wheels are or are you just looking for something that fits?

mainly just looking for something that fits - but the closer to flush the better
If you are going to drop bunch of money on wheels and tires, do it right the first time. Get the fenders rolled and get wheels that fit well, you will be very happy with the results. Trust me, I made these mistakes too and wished I went the extra mile.
every time i like something it's either discontinued of on back order...
so now I've decided to go with the TSW - Clypse and Hankook Ventus V12 EVO2 K120
theses are the recommended sizes when i put in my car info in on TSW.com & carid.com
front: 18 x 8.5 +20 245/40
rear: 18 x 9.5 +20 275/40
