I would recommend JL Audio Slash Series for both amps. Even though there are better amps JL amps are the perfect mix in performance and cost.
Speakers are a matter of taste, I like Boston Acoustics, Focal and JBL any component system from these brands will perform great.

I would buy the speakers you want first and than buy your amps according to the speakers. if you buy a more powerful amp than you need you can always turn the gain down, you just don't want to buy an amp that doesn't have enough power.
JL Audio amps are amazing I have them and I love them. They power my Focals perfectly, they are personally worth the money.

What I would do is purchase a JL 300/4 and take out the speakers in the rear deck, replace the speaker in the middle speakers and replace the front tweeters and speakers.
The 300/4 will be perfect for your Mids and Highs
