Do you apply sealant or wax every month? i am wondering if I should apply sealant now after a polish and top it with natty's carnuba wax every month or 2?

Yeah you should apply the sealant first then wait 12-24 hrs to sure and then apply the wax of choice over it.

Sealant usually lasted longer then wax but doesn't shine that much like wax. But with wax you have shorter durability, but get shine then sealant. That why some people apply sealant first and then wax. For the best of both worlds.

I put two coats of a Sealer on twice a year, One in Spring one in Fall. This is to include my full detail which takes two days. My car is Garaged & does not see bad weather, so I do not see a point in doing more.

Many factors contribute to how often you should apply wax/sealant.
If the car is outdoors, it will need to be done more frequently. If you wash/clean the car several times each month, you will need to re-apply wax more often as well.
If the climate is warmer all year round, you would need to re-wax since wax evaporates in warmer temps much quicker.

A general rule of thumb is polish/sealant at least every 6 months if you garage the car, and apply coats of wax every other month to keep the protection layered.

My general schedule is to compound my G twice a year (spring and fall), apply a sealant every 3 months, and apply a carnuba once a month. Wintertime is a little tougher to apply the sealant and carnuba since my garage is not heated. I sometimes use my Parent's heated garage in the wintertime, but I haven't done that this winter.

So topping poly sealant numerous times such as once a month with carnuba is fine it will not strip off the sealant?

I polish once a year, seal with M21 ~3months, and top with AW ~1.5 months, never seem to have run out of protection

Topping a Sealant with a Carnuba is fine, but topping a Carnuba with a Sealant is not. It's recommended that you let your Sealant cure for 24 hours before you apply the Carnuba.

Many people feel that topping a sealant with a wax provides more depth to the paint. As with everything, the polishing step is most important as far as looks go.

I usually just wax my car once every month or so. During the winter I wash my car once a week, and put a spray wax coat on it then. I know its not much, but its got to be better than nothing against the road salt and grime.
