So, I installed a catch can last year and haven't really driven my car a whole lot. Yesterday, I was working on my car and decided to empty the can out and it was full of like 1 or 2 cups of water. I kind of thought it was snake oil thing in dealing with extra oil going into my intake. I never really had that problem, but now I have a whole new respect for the catch can in the sense I think it's catching ALL the condensation from starting the car up or taking short trips and keeping it out from recirculating in the engine. I think it's a good add-on for that purpose alone and kind of wish I did it years ago now that I saw first hand what it was collecting.

You can accomplish the same thing by changing the oil at the recommended 3750 mile interval or twice a year without the need for a catch can

It's just condensation, normally the temperature of the crankcase oil turns all the condensation to vapor and it's ingested back via the intake. A catch can never gets that hot so it collects the water, it's common. Drain it every time you do an oil change, if you put a 1/4 turn valve on it with a hose that goes down below the vehicle (find somewhere to ziptie it to so it's not going to move around) then you can drain it easily. Just be aware it takes a little time to finish dripping so you should probably install a cap on the end rather than waiting 24 hours for it to stop dripping
3750?? Are u using conventional oil?
