The exaust sound is great, but if its too loud for you, here is what I recomend. Buy some dynamatt(spelling?) or b-quite and sound dampen the trunk. This will cut down on road noise and also exaust. The exaust that comes with the G35 is actually pretty good. It has variable output and some other nice things. If you dont change the muffler and dampen the trunk you can still roll all the windows down and hear that sweet sweet sound.

Tell her you'll get it fixed after you buy it... truth is, she'll just get used to it. She's just not used to the sportiness of the sound. She'll grow to like it.
If she's really that averse to the sound, you might should be looking at other vehicles. The G35 is also going to introduce more road noise, more responsive road feedback, etc... all the price you pay for decent handling and performance, at the expense of luxury/quietness/isolation. The TL or ES may be better options.

I think infiniti went to a lot of effort to make the engine in this car feel and sound sporty. It is not just exhaust, but comes from all around with noise and vibration.
My wife has a maxima with a very similar VQ. It is silent and smooth all the way to redline, with no vibration or harshness that you can feel or hear. The G35 you can feel the engine through the seats, pedals, floor, etc. Granted it has a few less HP, but not that much.
My last maxima was a 5 speed and other than a little vibration through the clutch pedal all was smooth and silent.
I believe that the noise in the G35 appeals to people and Infiniti engineered it in. There really isn't much wind noise (in mine anyway), it's mostly mechanical.
