If you want twisty roads in Texas, head up to Austin / San Antonio -ish areas.
Closer to San Antonio, There's the triangle 334-335-336, Highway 150 and 16,
Then in Austin there's 1431, Park Road 4, BullockHollow / Vallente Beach / Lime Creek Road, 1431, the list goes on and on.
Fun stuff in Central TX.

I'd have to say that the best road in TX this past weekend was the 2.9 mile road course at TWS! 
Weather was perfect, track was at a good temp. I only had video for 1.5 sessions, but I had a 2:11 lap and 2:13 lap based on the camera clock.
Burned through a set of brake pads in one and half days. Late braking and lots speed equals brake dust coming off like a blizzard.
