Or does it automatically engage / disengage depending on the thermostat / temperature setting like any other air conditioner
My guess is it's always on , and just mixes outside air to warm it up.

This might sound a lil mean and I'm sorry, but sounds like your understanding of an automotive ac system is just one big guess
. The compressor cycles on and off when the ac is turned on, and it has to do with the internal pressures of the refrigerant, and not what your temperature setting is for your vents

The G35 uses the newer style of variable pitch AC compressor (works almost exactly like variable pitch turbochargers if you're familliar with them), it scales the duty cycle to match the demand and there is VERY LITTLE cycling of the compressor.
