Yes, I did a search and about 400 posts came up. So, I figured I'll just ask here.
Do you need the hydroshield and what's the difference in filters: oil or dry?

I personally think the hydro shield is just a gimmick. By the time you submerge both filter elements in water completely, you've probably already hydro locked the engine at that point, shield or no shield. Although, i can't recall where i found the video, it takes quite a bit of effort for your engine to actually suck water through that long tube, through the filters.
As for oiled vs. dry, usually dry filters can filter better than oiled (K&N) but will need to be replaced more often. I've had K&N before, but other than the million-mile guarantee, i really don't see any sense in paying for, or using it over dry filters.

They also help to keep the oil based filters clean, adding time between necessary cleaning.
I read a study somewhere once that showed that they reduced air flow slightly.
In NE winters, I'd probably use them on oil based filters. I haven't bothered adding them to my dry filter setup though. My filters are still pretty clean.
