ok, see this i can work with. so basically you are saying that when you go to a bigger size rim that basically the tire has to get deeper and if you should choose not to have a deeper tire then you have to compensate with sidewall height. is that correct?

I wound up changing over to a stretched setup: 225 35 20 in front (8.5" width) and 255 35 20 rear (10").

Running 25mm spacers in front and 30mm spacer in back, and with the stretch it looks siiick, but rides a lot harder. Hmmmmm.....thinking of switching to 235 35 30 in front, wondering if that will cure the hard ride (only the front rides hard, the back, not so much).....any suggestions?

I have a 2006 G35Sedan and is lowered on Tein S-Techs (2" front and 1.5" Rear). Looking to get Axis/EXE wheels 19x8.5 wheels with 225/40/19 tires for front and 19x9.5 wheels with 255/35/19 tires for rear. The front offset will be 35 and rear will be 40. Will I need to get my rear fenders rolled

Dont think so, that is a pretty skinny tire setup. If you were getting thicker tires and running spacers, I would say yes.

i have 285/35/20s and barely rubbed on the passenger side, after i rolled them i dropped the car and no rubbing at all.

No that's cool, the fronts do not look stetched, but the rears definitely do look stretched! Dont wanna go any skinnier though, the ride is way too rough with 225's, actually regretting it.
